  • Peeled and cubed, 500 grams of potatoes.
  • All-purpose flour + flour – About 90 grams.
  • Salt to taste.
  • Black pepper.
  • Sugar – 1tsp.
  • Mozzarella cheese or other cheese like Cheddar.

Directions For Making Potato Cheese Pancakes Recipe:

  1. First of all, Peel the potatoes and chop them into medium size chunks.
  2. Now Boil potato chunks in salted water until fork-tender.
  3. After the boiling process, Mash potatoes immediately when still hot with a fork (or a potato ricer or a potato masher) until smooth and creamy.
  4. Now we add sugar, flour, salt, pepper to the mashed potatoes and mix until getting a non-sticky and slightly dry but soft mix.
  5. Make sure don’t overcome or your mixture becomes too sticky.
  6. Here you can add slightly more flour if your potatoes absorb more water during the cooking time and your dough is very sticky. You have to get a non-sticky potato dough.
  7. Use a 4cm-1,5inch ice cream scooper to take 2 scoops of mashed potato mixture.
  8. Now well flour your hands to avoid sticking, and form a disc.
  9. After that place about 1 tsp of chopped Mozzarella cheese in the center of the disc and roll to form a ball.
  10. Now slightly flat the ball, coat every side with some flour properly and place on a dish lined with parchment paper or well floured to avoid sticking issue.
  11. Repeat the same process again and use all the mashed potato mix, and you will get around 9 potato pancakes.
  12. Now, take 2 tbsp of vegetable oil and heat a large non-stick pan with this 2 tbsp oil, and cook every side at medium flame for about 4-5 minutes or until evenly browned.
  13. Now take them out, and drain them over a paper towel and serve immediately.
