ONE POT LENTIL AND RICE RECIPE. A HEARTY, VEGETARIAN, ONE-POT MEAL THAT IS PACKED WITH PROTEIN AND FIBRE. IT’S FULL OF FLAVOR AND COOKS IN JUST ONE POT.

Lentils and rice are a perfect pair. They are both hearty, healthy, and affordable. This one-pot lentil and rice dish are simple to make and perfect for a busy weeknight. How To Make One Pot Lentil and Rice Recipe?

First of all, take a large bowl and place the brown lentils. Fill the bowl with 3 cups of water and let it soak for around 8 hours or overnight for better results. After that, strain out the lentils completely and set them aside for further use. Rinse and drain the basmati rice 2 or 3 times, then set aside for later use. Finely chop the ginger and garlic, dice the tomato and red onion. Now, heat a saute pan on a medium flame, add olive oil and red onions, and saute for around 4-5 minutes.

Add the finely chopped ginger and garlic, again saute for 1-2 minutes, add lentils and saute for another1 minute. Add salt, chile powder, rice, cumin, coriander, sweet paprika, and pepper. Add the tomato and saute for another 1 minute, add the veggie stock and give the saute pan a stir to deglaze. Now, set the heat to medium-high flame and bring o boil after that cover and cook on medium-low flame for around 15 minutes. After 15 minutes turn the heat off and let the rice continue to steam, covered for a further 10 minutes. Finally, plate the rice and garnish with fresh parsley, lemon juice, drizzle of olive oil and freshly cracked pepper. Enjoy!

  • 1 tomato
  • 2 tbsp olive oil
  • 3 pieces garlic
  • small piece ginger
  • pinch of salt
  • 1/2 tsp cumin
  • few lemon wedges
  • few sprigs parsley
  • 1 tsp coriander
  • pepper to taste
  • 1 1/2 cups veggie stock
